Jerk cooking is an authentic Jamaican way to cook meat. Whether it is pork, chicken, beef or fish, the meat is seasoned and slowly cooked over an open fire or on a barbecue grill. "Jerk" is made up of regional spices ranging from scallions and thyme to pimento (all spice) and cinnamon. The first taste of jerked food is hot with pepper, but as you eat the other spices explode with stunning flavour. It is for this reason why all the other islands have adopted Jerk. Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning. Nicole will introduce visitors to all jerk spices and history, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home. WE TOUR NELSON'S DOCKYARD, SHIRLEYS HEIGHTS & SNORKEL This is a guided tour by a local spearfisherman. Taking in all the sights and sounds of the island on land and in the sea, with a very high chance of snorkeling with sea turtles, and a definite chance of seeing two shipwrecks! The snorkel is in mostly shallow water, off of a beach. THIS IS NOT A BOAT TOUR. Your snorkel guide enjoys spearfishing and can show you things while snorkeling you never even knew were below you! This is a private tour, meaning you will be the only travelers. It is roughly 4 hours long. There is cold water in the vehicle. Lunch is not provided on the tour. You will also have videos of you snorkeling around the shipwrecks and turtles emailed to you after the tour. If you don't wish to snorkel or if not all travelers would like to participate in the snorkel that is okay as well. Admission to national parks not included, it is 15$USD for two tickets, meaning you only pay one time.

Nicole explores all the many faces of curry while she creates a meal that fuses a little of the old styles with newer Western flavors.  Visitors will learn about the history of curry, its health value, and short cuts that can be used to create various curry based meals.  The goal will be to make it easy for visitors to go home and cook the same menu whenever they wish. You’ll be guided through the rum making process from start to finish by our rum experts. Guests will be taught distilling techniques (old and new) used to create delicious rum.
