The company has started in 2020 the conversion to organic farming. In the vineyard herbicides are not used, the soil is grassed between the rows to reduce mechanical work, erosion and runoff. The vineyard is treated with the technique of green manure generally favino and soil fertility is replenished with organic and mineral fertilizers without the use of chemicals. In the cellar are used only indigenous yeasts and neither microfiltrations nor stabilizations are done. The wine obtained is the result of an artisanal process respecting the environmental cycles and the natural attitudes of a territory. In addition to a lovely walk through the charming alleys of Spoleto and its historical landmarks, you’ll dive straight into "local life". We’ll start with a must of Italian social culture: "the aperitif." Then, we’ll stop by a local food shop to purchase a few fresh ingredients needed for our lunch. Next, we’ll head to my home, just a few minutes from the city center, where we’ll begin our cooking class. We’ll start with tomato bruschetta, followed by a tasting of burrata topped with freshly grated Norcia black truffle. After these appetizers, it’s time to "get your hands in the dough" — flour and eggs to make Strengozzi, a traditional egg pasta from Spoleto. Meanwhile, we’ll grate plenty of black truffle to prepare the sauce for our pasta. To finish, we’ll bake a delicious almond flour dessert with a cherry center. And of course, local wine and water will always be on the table.

The company started the conversion to organic in 2020 The company covers 10 hectares of which 6 are vineyards and has an average annual production of 40,000 bottles.

We start our this day with a tour of the farmhouse in which we will have the cooking lesson and afterwards, we will head to the kitchen where we will meet our chef who will teach us all the secrets related to the preparation of the home-made pasta and the lasagna itself. When it's all set, we will begin cooking ... we are so confident in your skills, that the lasagna you will prepare will be the main course of our lunch, buon appetito!
