The reason I created this class is to share the comfort and joy of mutual understanding and friendship through the experience of food. I am an artist who has worked in both traditional Japanese arts and the world of Japanese cuisine. Through this path, I’ve come to understand that “tradition” is not a single correct form, but rather a rich and diverse collection of cultures shaped over time. That belief—and my multidisciplinary background—is at the heart of what makes this experience unique. In this class, you realize that what we often think of as “sushi” today is just a small part of a much larger and more diverse tradition. While the definition of tradition differs from person to person, I believe one key to imagine the way people lived before the Industrial Revolution. Experiencing different cultures and discovering what connects us can fundamentally change how we see the world. I believe that is one of the most enriching experiences we can have.

Whether it’s izakaya, traditional washoku, or sizzling monjayaki, your guide will help you choose and order the perfect meal to end the day.
